Mango Salsa INGREDIENTS: · 2 mangos · 1 tsp garlic · 2 tablespoons cider vinegar · 1 teaspoon white wine · 1/4 cup chopped fresh cilantro · 1/2 onion, finely diced · 1/2 green bell pepper, minced · 2 tomatoes, diced · 2 tablespoons lime juice · 1 tablespoon lemon juice DIRECTIONS: Heat oil in a medium skillet over medium heat, and sauté garlic for about 1 minute. Mix in mangos, and cook 3 to 4 minutes, until mangos are tender. Pour in the cider vinegar and white wine. Season with salt and pepper, and remove from heat. In a medium bowl, mix mango, red bell pepper, green onion, cilantro, limejuice, and lemon juice. Cover, and allow it to sit at least 30 minutes before serving.
